Easy Enchilada Soup and Friday Fun Links

What are you guys up to this weekend? I hope you’re planning to get plenty of fresh air and outside time! Maybe a backyard BBQ with the family, a solo day at the beach with a great book, or a few long meandering bike rides with the kids? We are headed to my sister’s for a retirement celebration and pool party. I can’t wait to play with my sweet nephews and Emma. Then of course Sunday is Fathers Day! Get those home-made cards ready!

Here’s a super yummy soup that you can throw and the crock pot on Saturday or Sunday morning and no matter what you’re doing you’ll have a delicious meal waiting for you when you get home from your fun active day outdoors.

Icredibly Delicious Enchilada Soup

1lb boneless organic beef chuck
1 large can enchilada sauce
1 diced green bell pepper
1/2 diced onion
1 largish yam or sweet potato diced
1 cup water
1 cup whole milk (optional) – this just gives the broth a silky smooth consistency
Grated cheese (any kind you like)
Salt and pepper

Place the diced yam, onion, and bell pepper on the bottom of the cooker. Take the meat and salt and pepper as if you were seasoning a steak. The meat can be whole or cubed. It will fall apart easily once cooked.

Place the seasoned meat on top of the vegetables.Pour in the whole cN of enchilada sauce and one cup pure water. Cook for 8-10 hours on low with the lid on (basically the lowest setting on your cooker).

When ready to serve stir in the milk, and use the back of your spoon to break up the meat into chunks and kind of squash some of the potatoes against the side of the pot.

Ladle into bowls and add a handful of grated cheese on top.

Devour!
