Do you meal plan?

I’ve been a pretty ardent cook for years now but I wasn’t always the best about efficiently planning family meals. Last year I turned that all around and never looked back. Here’s how it works:

Every Saturday morning I sit down and write down the four or five dinners I want to make that week and the two or three that will be pantry nights or going out. Sometimes I scroll through Pinterest for inspiration but it doesn’t take long to come up with a few tasty ideas. From that meal list I then make a quick and easy grocery list and add in the other grocery staples we need (yogurt, milk, paper towels, etc.). Done! After shopping (Sunday morning) I tape my meal list on the tile near the stove. The meals can be made in any order I choose. It’s awesome and there are no more stressful nights stopping at the store after a long day or foraging around trying to figure out what I have at home to make a decent meal with. I highly recommend it!

Here’s the meal list for this week:

  • Steak and spinach quesadillas with Caesar salad (I’m actually going to pick up the Caesar salad at our super good local salad place and split it between the three of us)
  • Chicken breasts with a lemony caper sauce, broccolini and small baked yams
  • Cabbage, carrot, red pepper chopped salad with teriyaki marinated sautéed pork and a homemade peanutty Thai dressing. Sprinkle with salted roasted peanuts.
  • Slow cooker beef stew with carrots, onion, and garlic risotto (quick cheat tip: use a high quality boxed rice. Just add the rice and the seasoning packet ingredients straight to the crock pot); peas – added just before serving so they stay bright green and don’t get mushy.
